Cauliflower Everything Bagels!!!!
If you are trying to cut carbs or on the Paleo diet, this is a great recipe you have to try. At AFCC we get ideas and inspiration for our clean meals from several websites. Clean & Delicious is one I recently came across that had this cauliflower bagel recipe on it I had to try. Before I go into how I had to tweak the recipe based upon what was in the kitchen, let's talk about "low carb" and/or "paleo diets".
Low carb diets normally restrict your carbohydrate intake and force your body to use another source of energy. Paleo diets are normally high in fat, low in carbs and your body uses fat for energy. Both programs will work for you BUT I must stress your body needs carbs and healthy fats. Carbs provide an excellent energy source but you should focus on eating healthy carbs, preferably lower on the glycemic index and timing with your carbs is very important. Individuals I've seen do the low carb or paleo diets definitely see a change in their bodies. The downside to this is if you ever start putting carbs back into your body, guess what, your body will soak it up like a sponge and you will definitely gain the weight back. Same with a Paleo diet, if you deviate from the paleo diet, your body will quickly revert back to where you were before. Because of this, I strongly encourage people to really think hard about your fitness goals and commit to staying on these "diets" if you see it's working for you or get ready for a roller coaster ride.
Now, back to the recipe. The link above will take you to the full recipe and video of how to make them. I didn't have any coconut flour or almond flour so I used what I had (soy flour 3tbs). I also used the garlic roasted steamed bag of riced cauliflower (don't steam it, just pour it into your bowl, it will cook in the oven). All other ingredients I pretty much used as outlined (I used Trader Joes Everything But the Bagel seasoning for the topping). The one bag of frozen riced cauliflower yielded about 7 bagels for me. They baked for about 30-45 mins and were really really good. Mine were kinda thin so I was not able to slice it like a normal bagel so I just flipped it over and put my greek yogurt cream cheese mixed with sweet chili sauce for the spread. Delicious and low carb. A great all day, late evening snack. Give it a try.
